Is it really ALMOST Thanksgiving? We're SO excited, because to us, Thanksgiving means a lot more than turkey (and giving thanks for our families). This holiday is all about the vegetables!
On our blog, we have a roundup of healthy vegetable side dishes from fellow dietitians across the web, so be sure to check out the link for fresh new ideas including our holiday classic: Cream-less Creamed Spinach.
Other seasonal recipes ...
Cauliflower Steaks with White Beans: This can be served as a vegetarian main meal or side dish, and it's as easy to make as it is delicious.
Tabbouleh with the Works is made with bulgur, chickpeas, tomatoes, dried cranberries, herbs, and a lemon & olive oil dressing, and it's great with dinner or packed along as a lunchbox side.
Golden Mashed Potatoes: We mix sweet potatoes with Yukon gold for a healthier, lighter version of traditional mashed spuds.
We have a fascinating Cooking with the Moms podcast this week on whole grains. Tune in as we discuss whole grain nutrition, trends, and the reasons why celiac disease and gluten-free diets are on the rise. You won't want to miss this show.
Wishing you all a healthy, delicious, and fun-filled Thanksgiving.
