Happy Weekend!

It's Cinco de Mayo AND Kentucky Derby day, altogether today in 2018. And we have one gorgeous day in the forecast here for Minnesota. We're looking at 80 degrees today and in the 70's all of next week, yay! It was so good to FINALLY see crocus and daffodils in bloom in our yard and neighborhood this past week.

My Favorite Things this week... Last May I traveled to Oceana County, Michigan for their asparagus harvest. Did you know that Michigan is the asparagus capital of the world?! I found the whole process of raising asparagus fascinating, you can read about it here. While I was there, I spent some time in the kitchen with Gina Ferwerda. She made the most delicious asparagus guacamole! Her first cookbook was just released, celebrating meals from her beloved Michigan, and she sent me a copy - it's been my bedtime reading this week. I can't wait to get in the kitchen with it! Be sure to heck it out (link here)!

CRUMBS: What We Made This Week

Today couldn't be a more perfect day to enjoy a margarita - it's Cinco de Mayo! My go-to recipe is this one for Traditional Margaritas.

Chocolate Cake with Chile-Chocolate Buttercream. A favorite with our family, our oldest baked this for our Sunday Supper last weekend. For those of you looking for a fun #cincodemayo treat, this cake would be pretty dang perfect!

RECIPES:
Buttercream and Chocolate Cake
We switched up the cake to our favorite 9 x 13 chocolate cake with this recipe. Just use a 9 x 13 pan instead of the cupcake pans, bake cake for about 35 minutes or until a toothpick comes out just barely clean. Let cake cool completely before frosting. Sprinkle with cinnamon to finish, if desired.

And we made this Grilled Chipotle-Orange Salmon for the second week in a row.

Yes, it's that good!
