Officially now. Happy New Year!

The shot to the right is what I shared to my Instagram story as I woke yesterday morning. And we awoke to the very same temperature today. We're into 2 weeks straight of these sub-zero temps, and it's getting a bit old. There's going to be celebrating in the streets when this weather pattern breaks tomorrow >>> a high of 29 degrees is in our Minnesota forecast. Woohoo!

Don't miss the recipe I shared this week - it's been a favorite of ours when winter gets brutal. This soup is hearty comfort through and through.

Thank you so much for joining me here, for reading the blog, and for following along on social media.

Have an awesome weekend!

This Slow Cooker Beef and Barley Stew will make any cold, wintry day feel much, much cozier. And believe me, our weather here in the Midwest has been begging for this soup. Baby, it's been cold outside!!

What We Made Recently

One of our family's favorite meals: Carnitas! Pork is braised nice and slow until fork-tender, and emerges from the oven with a beautiful crispity crust to the edges. It's incredible. Trust me!

This Broccoli Cheddar Soup is a fresh, humble bowl that's perfectly delightful. The recipe comes from Smitten Kitchen, and the only thing I changed was to stir in an extra handful of sharp cheddar at the end. (Also: heed Deb's tip to peel the broccoli stems!)

Cinnamon Streusel Apple French Toast Cups are a great way to start any day. And this recipe includes instructions for making a single cup OR six cups!

Turkey Taco Bowls with Cilantro Lime Rice is my little homemade version of my favorite salad bowl meal at Chipotle Mexican Grill.

These Fudgy Chocolate Meringue Cookies are soft and chewy in the middle, with the most delightfully thin and crackly exterior!
