If you think this Bubble & Squeak recipe sounds familiar then you would be right. It's actually been on my website since 2015 and I've re-written it and re-photographed it as it needed some love.

I've been going through a bit of an uninspired spell and when that happens I like to go back and revamp old recipes until the ideas start flowing again.

Bubble & Squeak is another traditional English recipe and my version is super healthy and really low calorie. It also happens to be cheap, filling and a fabulous way to use leftovers. You can throw in any cooked veg that you happen to have in the fridge. I often purposely cook too much so that I can make this the next day.

It's one of our family favourites and I hope you enjoy it as much as we do!
