Just in time for backyard cookouts and July 4th celebrations, I've got a new recipe on the blog for Italian Pork Kabobs with Summer Vegetables. These fun and flavorful kabobs are made with lean pork loin, zucchini, bell peppers, and an oregano and basil marinade. Your kids will have as much fun helping you make these kabobs as eating them.

The reason I'm a few days late with my newsletter (I usually send it out on Wednesdays) is because I had "one of those weeks." I was on Nantucket on Tuesday teaching a family cooking class at Nantucket Culinary and then I took the ferry back to the mainland, rented a car, drove home to Lexington, MA and then got up the next morning and drove to Connecticut to visit my folks. Phew. I'm tired. But I stayed well fueled and made sure I got plenty of fiber by packing along some smart snacks, including Metamucil Fiber Thins. Have you tried them yet?
