Here we go:
Steam or boil 2 lbs. baby potatoes. Should just give little "pop" sound when you stick knife in them. Baba have soft spot for steam.
Baba Hint: cut potatoes in half before cooking. They will cook faster. For better flavor, do not peel.
In meantime, throw 3/4 tsp. caraway seed in medium hot cast iron pan. Heat for two minutes, till they smell good. They will not pop like popcorn. Baba know you hoping.
Add more butter than ingredient list recommend, which is 1/4 cup. You know you will.
Once pound of butter melt, add peeled and sliced garlic. Again, as much you like. Three clove will give good taste. Six will guarantee you can speak only to other Ukrainian for next couple days.
Pour potatoes into colander, and dab with paper towel.
Baba Warning: Unless you is some kind expert, do not pick caraway seed yourself. Plant is also related to fennel, caraway plant look similar, and your dish will taste like licorice. Fry garlic only for minute, or it will burn. If you see garlic get brown, scoop out immediate! If you find your Ukrainian cooking have strange bitter taste, burn garlic is cause.
Throw in potato pieces. Be gentle, gentle when you stir. Baby potato have tender feeling. Stir until all side is coated with butter and caraway.
