I also tried a new cut of beef from Carnicopia that I had not tried before: a shoulder tender. It was recommended for slow cooking, but the clock said 5 PM and thought I give it a quick roast for hearty roast beef sandwiches on some fresh Malvern Buttery bread. All I did was give it a good rub down with salt, pepper and garlic, and then roasted to medium rare. Sliced it thin. Paired it up with horseradish. It was amazing. The flavor of the meat, exceptional.

Quick note about the Buttery - they will be back at the market in the spring - not to worry. This week they'll be sending over coffee, just because they miss us. We miss them too, but we know where to find them for the winter months!
