The chile season is getting underway in New Mexico and soon you will start seeing Hatch Green Chile available in some of the grocery stores in Las Vegas. We always wait a couple weeks into the season for the more mature and heartier chiles. If you compare the chiles we get to what is available at Smith's, I think you will agree that there is really no comparison. We always get our chiles direct from Gillis Farms and Duane Gillis produces a plump meaty chile compared to the small thin-fleshed chiles you find at Smith's. Wait a couple of weeks - it is worth the wait!
Rising product costs, labor costs, transportation costs have resulted in an increase again this year.

All Sales Final - No Returns!!!

Every year we get customers who think the chile is too hot, not hot enough, over roasted or under-roasted. Once we even got the complaint that the chiles were too short - that comical event is on display here:

Everyone has a different preference as to what he or she considers hot and how roasted they like their chile. For this reason, we encourage you to look at and taste the chile prior to taking it home. If you are dissatisfied for any reason, we will roast you another sack while you wait. Once you leave with the chile, we cannot accept returns for any reason.

Weekend Wait Times - Please Read!!

The weekends, especially the first weekend, are always the craziest and will have the longest wait times - it is not unusual for wait times to be over three hours the first two weekends.

If you do not enjoy waiting around for your chile to be roasted, do yourself and us a favor and avoid the first and second weekends. Fear not! We are receiving approximately 30,000 lbs. and do not anticipate a shortage - it is physically impossible for us to run out on the first weekend or even the first week! Last year, we sold out in 12 days. The shortest wait times are typically weekdays from 2pm-5pm.

Avoid Long Wait Times - Get Your Chile Un-Roasted

Just pay, grab your sack of chile, and run!! Roast it yourself at home while sipping on your favorite cocktail!
