Baba going to teach you to make traditional Ukrainian drink from honey. Is very warming, comforting and healing. Sbiten is at least 1200 years old. We can find in old Ukrainian documents.

Everywhere Baba look, "Russian" stealing Sbiten and claiming is their ancient drink. Ha! They invent nothing, and was no such place as "Russia" until 18th century. Muscovy was small Mongolian tribute, so unimportant that Mongol barbarians burn it to ground twice, just for fun!

Ukrainians are Indigenous people of Eastern Europe, on our land since before Ice Age. Baba want to 100% reclaim our identity. Hey "Russian": you steal from us, Kozak Baba take back!

Sbiten is spicy Holiday drink, non-alcoholic, made with honey. It will warm your bones in winter. Is excellent to serve anyone who go outside in winter. Your Ukrainian carolers will love! Without alcohol, serve to kids after skating or sledding.

Sbiten Ingredients for One Gallon

▪ Honey, four cups
▪ Water, one gallon. Spring water, if you can get
▪ Cardamon pods, eight
▪ Cinnamon sticks, eight
▪ Whole cloves, two level tablespoons
▪ Dried chili peppers, four
▪ Cheese cloth

Your Options

▪ Sliced ginger root
▪ Mace

"But Baba," you saying with shock and dismay, "These spice is not Ukrainian!"


"Poopchik," Baba say to you, "Kyivan Rus' was most important trade route in Europe, from south to north and east to west! We had everything, and was already world's best beekeepers."

Make Sbiten

Hoo boychik, Baba seen some complicate instruction for this stuff. Listen, just pour everything into large pot and heat to boiling.

Most important thing: stir gentle so honey melt. Sing it love song. Sing it beautiful song. Say, "You are my honey." Recipe listen to you like plant and pet. Put love inside.

Once Sbiten boil, remove from stove element. Baba know you want to leave sitting there. No. Clear whatever crap is sitting on counter, and put pot on something won't burn. You have to treat your honey right!

Leave alone for one hour. Sbiten need time to cool its heels, shed "Russian" identity and recall proud Ukrainian history.

Strain Sbiten into air tight container, with cheesecloth.

Put in fridge

Drink hot or cold.

This is another one of Baba's Lazy Recipes. Alcohol version have no brewing involved. Just add good vodka! Or if you like, dark rum or brandy.

Who remember type of brandy called "Hospital"? Hospital actually stock this. Because if doctor can't find what is wrong, you might as well drink! No, actual, shot of brandy can help with shock and bad heart.

Baba just get back from 2 surgeries and week in hospital. They do not serve drinks.

Brewed alcoholic version of honey drink is call Medovukah, and take 2-3 months.
