Hello and welcome to another Lavender and Lovage Newsletter! Mothering Sunday aka Mother's Day in the UK has come and gone, and I hope all of you mums, and grandmas, out there had a relaxing time with lots of treats....but today, I'm here to talk CURRY and SPICY stuff! It's Friday and what better food can there be for the weekend, then a big bowl of curry, so today, I'm sharing some of my favourite recipes for the hot (and not so hot) stuff. Starting off with my latest recipe for Pork Balchão, which can be made well in advance before serving.

Curries can be laden with calories, and it's true that lots of recipes have acres of oil in them, but I have several wonderfully tasty recipes on Lavender and Lovage that are very low in calories and fat, which make them perfect for those watching their weight! This recipe for Spinach, Lentil & Sweet Potato Curry has only 244 calories per serving, and what is lacks in calories is more than made up in taste. Serve this curry with a mini naan bread for a complete curry supper that comes in at a very low 350 calories, and it is packed with lots of your TEN-A-Day too! This recipe, as well as my popular Chole Chaat (Chickpea Curry) are a great way to kick start the week, as they are both vegetarian which is just the job for "Meat Free Monday"

I have lived overseas for most of my life, and I grew up in Hong Kong, where lots of my school friends were Nepalese.....so, this next recipe is very close to my heart, as it's a Gurkha recipe for Kukhra Alainchi Sanga, which is Chicken and Cardamom Curry. As well as this curry, I also have a soft spot for my mum's Egg Curry, which is based on an Edwardian recipe....the smell of this curry is redolent of hot, humid school days in Hong Kong, a long journey back home on a rickety school bus and then a dusty climb up a steep hill, cicadas buzzing in the background with not a breath of air – an itchy school uniform and tired feet that craved escape from “school shoes” and socks, my thick (and unruly) hair scraped back with a headband…..the mosquito screen on the kitchen door bangs and I enter the coolness of the flat to a spicy and rich aroma……..curry!
