One of our favourite uses for Fred & Bex Vinegars is making salad dressings - but a delicious dressing deserves some seriously good ingredients! And at the moment, lots of those wonderful ingredients are going for absolutely nothing in the hedgerows and fields - so why not try a bit of foraging?
Wild Sorrel: with a fabulously sharp, peppery flavour, wild sorrel is the perfect addition to a salad. It's usually found growing on grassy verges, and it likes to snuggle down underneath other plants so you have to root around a bit to find it.
Vetch: a member of the pea family, vetch has the same delicate frilly tendrils as the pea shoots you can pay lots of money for to decorate your salads. Save your pennies and pick it yourself.
Lady's Smock: a pretty pale pink flower with slender leaves that have a lovely tangy mustard taste - sprinkle over the top of a salad for a bit of a kick. It's often found growing near to water, and it's a favourite of butterflies.
When foraging, always take care to consult an appropriate expert (we like the River Cottage foraging handbook) and never eat anything you aren't absolutely sure of. Fred & Bex accepts no responsibility for any idenfication errors.
