Happy New Year! Yes, I am very late on delivering that greeting, so I can only hope that your new year is off to a great start. Mine is showing promise. My health is great, I've just joined a new gym, and I have a few new ideas for the future of fatfreevegan.com as well as my blog. Stay tuned!

Lately I've been making a super-easy cheesy sauce to serve over baked potatoes, so I decided to try it as a casserole. Vegan Scalloped Potatoes with Chickpea Cheese Sauce is the (very delicious) result. If you've been looking for a cheesy sauce with no added starch, flour, oil, nuts, or gluten, this is the recipe for you! It comes together in minutes (slicing the potatoes is the most time-consuming part) and then you stick it in the oven and find something else to do for an hour.

It looks like 2016 is going to be a creative year for my friend Maria. Healthy Super Bowl Grub

OK, I have to admit that I've watched the Super Bowl only once, and that was because the Saints were playing and my family was invited to watch with friends. So I'm no expert on what to serve at a Super Bowl party. I do know there are usually chips and lots of guacamole, but there has to be something a little healthier than that, right?

If I were planning a party for more than just my husband and me, here are a few of the dishes that I would serve. Most of them aren't traditional Super Bowl foods, but they're all dishes that meat eaters and vegans can all agree are delicious.
