Lean & Green Recipe Corner

Herb Roasted Pork Roast

Herb Roasted Pork Tenderloin

Ingredients:
4 lbs Pork Tenderloin, Lean Center
2 tsp Fresh Cracked Pepper, coarse
4 Tbsp Parmesan Cheese, finely grated
2 Tbsp Fresh Rosemary
1 Tbsp Fresh Thyme
1/2 tsp Garlic, finely minced or paste
1/2 tsp Cumin
1/8 Fine grain salt
1 small Onion, cut into 1/4" slices
1/2 cup water

Directions:
Preheat Oven to 350 degrees F.
Mix all of the spices and cheese together in a bowl.
Massage mixture into pork for a minute.
Line bottom of a small shallow roasting pan with onion slices.
Put pork on top of onions fat side on top (if any).
Put extra herb rub under roast, and then place the remainder on top of the roast.
Pour 1/2 cup water into the bottom of the pan.
Bake in oven for about an hour until meat thermometer reads 145-160 degrees F.
Remove from oven and cover with foil, let rest for at least 15 minutes. Check temperature again to ensure it has reached 160 degrees.
Makes about 10 portions, each containing 1 Lean and 1.3 condiments
