Hello! Happy Weekend - I hope you had a great 4th of July!

We have had what I would call a near perfect week of summer weather here in Minnesota. The humidity left a few days ago and it's been in the mid-80's, with cool mornings and lovely evenings. I even took the girls and a few of their friends to the lake for a day. It's been gloriously "SUMMER"!

It was a little odd with the 4th of July falling in the middle of the week, but it made for a more relaxed and fun week all around. We hosted a little gathering here the night before the 4th. And then on the 4th, we attended our small town parade, enjoyed dinner out, and grabbed some ice cream. If you're ever in Stillwater (MN), be sure to check out the excellent ice cream selection, generous portions, and reasonable prices at Nelson's!

My Favorite Things this week... As I'm writing this Saturday evening, our oldest daughter is finishing up her shift at work. We know when Hatti gets home, she'll be hungry. And so are we. So as soon as I finish this newsletter, I'm off to make a couple batches of popcorn. It's our family's favorite and most frequently eaten snack. I think this craving rubbed off from my dad - he has taught us to love popcorn! And his perfect popcorn making skills convinced me to purchase the same popper he owns. We've been using this popper (link HERE) for more than a year, and completely recommend it.

This Mojito Fruit Salad was so fun for the 4th of July!

I simply combined watermelon, blueberries, strawberries, a few raspberries, and some jicama stars with a mixture of fresh lime juice and a little bit of powdered sugar. Then I folded in some chopped fresh mint. Delish!

When the strawberries are at their sweet summer peak, we love to make a Strawberry Lemonade.

Click here for the recipe that is totally from scratch. And if you want to skip making the lemonade portion of the recipe, simply sub your favorite purchased lemonade.

We like to grill using cedar planks, for the smoky-woodsy flavor and aroma. These Cheesy Stuffed Mushrooms Grilled on a Cedar Plank are an easy appetizer or side dish. We served them for our 4th of July gathering as an appetizer - they disappeared FAST!!!
