MiracleNaise: Soy-free Mayo plus Roasted Red Pepper Dressing

If you're having trouble finding a low-fat vegan mayo because you avoid soy, you have to check out my latest, tofu-free recipe. I combined a common vegetable with just a handful of cashews to come up with this ultra-light spread. It makes a great base for salad dressing, so I included a recipe for an easy garlicky red pepper dressing that adds flavor to just about anything. Try it on baked potatoes!
