 | Larry's Fiesta Rice Bowl is healthy comfort food at its very best. Blend brown rice, veggies, black beans, Larry's Ranchero Sauce and cooked chicken to make a tasty, savory dish that will make you and your family very happy. Leave out the chicken and you have a delicious vegan dish. 1 cup medium grain brown rice
2 cups water
1 cup Larry's Ranchero or Chipotle Sauce
1 cup shredded cooked chicken
Salt and pepper to taste
1 cup cooked black or pinto beans, drained
1 cup minced red or green pepper
1cup fresh or frozen corn kernels, cooked
2 tablespoons minced fresh cilantro (optional) ▪ Place the rice and water in a medium pot and bring to a boil. Cover and reduce heat to low and cook for 20 to 30 minutes until rice is cooked. Keep warm.
▪ Place Larry's Ranchero or Chipotle Sauce, chicken, salt and pepper, beans, red or green pepper and corn in a bowl and stir to blend well.
▪ Stir sauce and bean mixture into brown rice and stir to blend well.
▪ Serve with a sprinkling of cilantro on top.
