Vegan German Potato Salad

German Potato Salad is vinegary and smoky-flavored, and it usually gets that smokiness from bacon. But my vegan version uses no bacon--even the vegetarian kind. Normally, I make it to taste, adding vinegar, mustard, pepper, and smoked salt until I get it right, but I decided to take the time to measure and write down the recipe so that I could share it with you.
