We'll be hanging out with friends at a parade and a cookout. There maybe some chores involved too, but I don't want to talk bout it. Are you doing anything for St. Patrick's day?

Unless you've been living under a rock, you probably have seen the viral video of the BBC interview that is invaded by a dancing toddler in a yellow sweater. I think I've watched the video two dozen times if not more. The kid, the mortified father, the second toddler invasion, and finally the mother's mad ninja skills to get the kids out. Hilarious! Then PeroLike makes a parody video, and I die!

what i'm watching

This weekend was pretty uneventful which was awesome! I needed an uneventful weekend. Friday night Obed and I went to Studio Movie Grill for dinner and a movie. Side note, I love dine-in movie theaters! No more rushing through dinner to make the movie. (Because when you're pushing 40 it's the 7 pm showing or nothing.) Dinner and a movie done in one shot, love it! Anyways, we went to go and see Logan. Mind you I am not a superhero movie fan. I've only seen one of the X-men movies and I think a Spiderman movie ages ago. But, Logan is not your typical superhero movie and I have to admit we loved it. It's violent, intense, and sad but totally worth seeing.

I haven't posted these pancakes on the blog yet because I have been testing the recipe but I am pretty confident these are the winner. I am always looking for ways to get more protein into my diet without having to eat meat. Don't get me wrong I love meat but sometimes I get tired of it. For the last few Sundays, I have been making a double batch of these pancakes and freeze them for breakfast through the week. Because you guys are awesome I am sharing the recipe with you first. We love them with fresh berries, sliced banana, & a drizzle of maple syrup. Sometimes as a snack I will heat one up and top it with a dollop of greek yogurt, berries, and granola.

make-ahead protein pancakes

9 pancakes

1/2 cup whole oats
1/2 cup multigrain hot cereal w/ quinoa & flax (Hodgson Mill)
1 ripe banana
2 eggs
½ cup egg whites (about 4 egg whites)
4 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
2 scoops protein powder (I like to use Isopure Unflavored zero carb)

Place all ingredients in the blender and blend until smooth.
Use 1/4 cup of batter per pancake.

Freeze with plastic wrap or parchment paper between pancakes. Microwave covered for 1 minute.

Cal: 120
Fat: 2.4
Carbs: 16.2
Protein: 10.3

So, it's was sunny and warm for the last few day and then the temperature dropped dramatically. But, it's ok because I am thinking that this Guinness Beef Stew will make it all ok.

I'm not a huge fan of popcorn but I can get down with this Samoas Moose Munch all day long.

Finally, I am seeing some variation of this Chipotle Sweet Potato Noodle Bowl in my future.

Even your food needs space!

Do you love crispy caramelized edges? Whether you are roasting on a sheet pan or searing in a skillet the secret to a crispy brown crust is to not crowd the food. Food releases moisture as it cooks and if there is not room for the steam to evaporate is will result in soggy sad food. Not only do you want for food to brown but the brown crusty bits left behind in the pan are critical for developing flavor.

I know we are all in a hurry but, it is worth taking your time and cooking in small batches to not crowd the food.

"What is your favorite vegetable and what is your favorite way to prepare it?"

You may be surprised, but my favorite vegetable is brussels sprouts. I know right? Crazy! There was a time that my nose wrinkled just at the thought of brussels sprouts but, that all changed once, I ate roasted brussels sprouts. I LOVE roasted brussels sprouts! I trim the base of the sprouts and cut them in half. I then toss the sprouts and any loose leaves with olive oil, salt, & pepper and roast them in the oven. The loose leaves get crispy, and the sprouts caramelize and become tender. Mmmmm! I am hungry just thinking about it!
