Well, this last week has been quite a whirlwind around here! We got a new puppy who is super cute and I also celebrated my birthday, participated in a career fair, attended a school health advisory council collaborative meeting for the Greater Houston and more. I'm ready for the weekend which will be a bit more lowkey continuing the birthday celebrations and attending a sugar cookie decorating class with my daughter (if youfollow me on Instagram, you may have seen some of my creations). What have you been up to this last week? I know many of you are probably hibernating with the extra cold temps in the US too!

On The Blog - Mexican Spinach Dip

Who will be watching the Super Bowl this weekend? We're usually hit or miss, especially when one of our favorite teams is not playing but I'm sure we'll tune it at some point.

Whether you'll be hosting a watch party or just for anytime, you should give my Mexican Spinach Dip a try! It's one of the most popular recipes on my blog and it is SOOO yummy. A twist on traditional spinach dip and made with all fresh ingredients, it will be a hit at your next get together too!

Weekly Menu Plan

Hey all! You've asked for it so you got it--more dinner recipe ideas and a weekly menu plan! I'm still working on getting those breakfast, lunch or snack ideas included too so stay tuned!

Here's what's on our dinner menu plan for this week:

Week of January 27, 2019
Sunday - Special activity-- out to eat!
Monday - Quick and Easy Crunchy Oven Fried Cod - newish recipe (tweaking this one--please ignore the not-so-great photos!), plus Roasted Rosemary Potatoes and roasted broccoli
Tuesday - Slowcooker Baked Potato Soup (testing a recipe to come to the blog sometime!) with garden salad
Wednesday - Homemade Chicken Pot Pie <--THE most popular recipe of all time on my blog!
Thursday - Chicken Risotto (freezer meal) plus, you guessed it--garden salad!
Friday - YoYo (You're On You're Own-- usually leftovers or my teens are out with friends so I often don't plan much)
Saturday - Leftovers

Keeping It Real Tour

Last week I kicked off the Keeping It Real Tour on my blog. This year I want to help you with your meal planning goals. What Caught My Eye (and Ears) This Week

I've decided to change this section into a collection of news stories, books or things I'm listening to that caught my eye (and ears) this week so you can get to know me a bit more and maybe offer some of your own suggestions! I was extra busy last week so didn't get discover as many new things as usual but here goes:
* Love 'em or Hate 'em, here are Six Stupendous Reasons to Appreciate the Heck Out of Squirrels
* Have you gotten into the Marie Kondo craze and are cleaning out closets? The Foster Coalitionhas locations all over where you can donate to those in need.
* If live in or are ever in the Houston area, you may want to check out these Best Ethnic Grocery stores for some inspiration in the kitchen!
* My friend shared this story about Costco's newest offering for a Street Taco Kit. And everyone commented and seemed to love it--LOL! Coincidentally, I had seem them there just the day before and wondered how they are! Have any of you tried them?
* My book club is reading this book for February. One of our members selected Dreamland: The True Tale of America's Opiate Epidemic for this month as she's hosting our meeting (we rotate that way--host chooses the book). It's scary, sad and informative all at once. I've only just begun it but so far, it is quite fascinating!
