Thanks to everyone who sent in healthy Super Bowl party recipes! You gave me so many great ideas. Brown Rice Vegetable Paella

Parboiling short grain brown rice is the secret to making a great vegetarian paella without white rice. My version includes butter beans, Italian green beans, red peppers, and artichoke hearts for a colorful and delicious main dish. Get the recipe here.

Super Bowl Party Foods


Roasted Cauliflower Bites with Vegan Nacho Cheese Sauce

I manage to keep junk food (mostly) out of the house, but on Super Bowl Sunday, all bets are off. Having bowls of chips and guacamole and other high-calorie snacks is almost as big a tradition as wearing your favorite player's jersey and screaming at the TV. I recommend substituting or at least supplementing those snacks with some healthy ones:


Bryanna's Guacamole

Instead of packaged guacamole, make your own. You can cut down on the fat and calories by adding healthy, low-fat ingredients. Bryanna Clark Grogan's delicious Low-Fat Veggie Guacamole includes green beans and lima beans, to cut down on the fat of the avocados. I use tomatoes in my Smoky Chipotle Guacamole, adding flavor and cutting down on the amount of fat per serving.

Tortilla chips and other fried chips are some of the most calorie dense and nutritionally empty "foods" you can eat. Make your own baked tortilla chips, or scoop up your guacamole with veggies, such as baby carrots, celery sticks, or the roasted cauliflower bites pictured above.

Use homemade baked tortilla chips to make healthier nachos. Top them with Lentil and Cauliflower Taco Filling and Vegan Nacho Cheese.


Big Pot of Really Good Chili

Finally, start with a hearty meal so that you won't be as tempted to snack. Vegetarian chili is easy to make in advance, and most meat eaters will enjoy it. Some of my favorites are Thick and Hearty Pinto Bean Chili, Gold Rush Chili, and Nava’s Big Pot of Really Good Chili.

--I already make & bake large meatballs using the recipe for your No-fu Lentil Loaf, so for the Super Bowl, I’m going to make them much smaller and insert toothpicks in order to dip them in my really good no-cook pizza sauce (using equal portions of tomato paste & water and lots of Italian spices).--JoAnn

--Apple nachos are a healthy, fun and easy alternative to the regular nachos. Drizzled with melted nut butter, coconut, chopped pecans, mini chocolate chips…endless possibilities!--Lynn

Pimento Cheese Hummus

--Lorena says: For Superbowl Sunday, we’ve had everything from pizza and chili, to buffalo cauliflower and healthy jalapeno poppers (slice jalapenos in half lengthwise, deseed/devein, stuff with nonfat refried beans — black or pinto — and bake; then top with a dollop of guacamole and a sprinkling of cilantro). And, of course, chips and dips — hummus and pita bread, guacamole and bean dip — layered and not — with tortilla chips, or potato chips and a creamy tofu-based caramelized onion dip.

--Thanks to Judith, who wrote: Buffalo cauliflower! Roast the smaller pieces on Silpat at 400 for 15 minutes and then toss with your favorite buffalo sauce like Franks until heated through. I took Judith's suggestion of roasting the cauliflower, but instead of making it Buffalo style, I served it with my new favorite Nacho Cheese Sauce. The recipe for both cauliflower bites and sauce are now on my blog.
