As some of you know, I'm going to be having surgery tomorrow (Tuesday) and expect to need a little time to recover. Dear friends will be bringing us meals so that I won't have to cook during my recovery time. So I'll be taking a little break from blogging, but I hope to be up and cooking up some new recipes soon.

I appreciate all of your healing thoughts, prayers, and good vibrations!

Creamy Curried Kale and Chickpeas

So quick and easy, not to mention delicious! After seasoning and cooking, I blend the kale with a few cashews to make a rich and creamy sauce and then simmer the chickpeas in it for a few minutes. If you have pre-chopped greens, it comes together in no time.

She writes, "This warm potato salad is a step aside from the traditional version: it’s cooked in a hot skillet and doesn’t call for mayonnaise or other fattening dressings.
