One of the questions I encourage my clients to ask themselves is, "What Am I Really Hungry For?" This simple, but powerful question, if asked with curiosity and great kindness, can begin to open a window to the soul. How many times do we turn to food, when what we are really wanting is companionship, laughter, a listening ear, someone who "gets" us, a hug, some quiet, a walk in the woods.

As I have been asking myself this question, a few things come up: time for writing, nature, and deep relationship.

Which is why I am giving myself permission to "disappear" for a spell in October, to go to the Berkshires, take some yoga classes, do some creative writing, hike, and spend time with my bestest friend, my sister. I was inspired by the lovely Jan Rule, yoga teacher and owner of Stillpointe Wellness Center where I am so privileged to "work". Every year around her birthday, she takes time away to celebrate her life. So for my 48th birthday, that is what I am doing.

Who needs food for a reward? There are so many other ways to indulge ourselves. Take time to take care of YOU.

For sure, most of us are CLUELESS as to WHAT dark greens are, WHY we need them, and HOW to prepare them so they don't taste like a bunch of grass! Real Food, Real Fast!

Autumn is the PERFECT time for a big pot of soup! This is a classic, client favorite. This makes a large quantity, but never fear, it freezes beautifully. Cook once, and have lunch for the week.


Get your Greens Minestrone Soup

Serves 8

I adapted this recipe from Rachael Ray, exchanging prosciutto for heart-healthy turkey. This makes a big pot and is great gently reheated. Top with grated sharp cheese, and if you’re not watching carbs, serve with whole grain bread. Vegetarians skip the turkey and use vegetable stock.

• 2TBS extra virgin olive oil (EVOO)
• 1 med. onion, chopped
• 2 ribs celery, chopped
• 2 large cloves garlic, crushed
• 1 lb. ground turkey
• 1-2 bay leaves
• 1 TBS. Italian seasoning
• 1 can white beans, drained
• 1 can garbanzo beans, drained
• 8 cups chicken stock (I prefer low sodium and/or organic)
• ½ lb. green beans, trimmed and cut into 1 inch pieces
• 1 medium zucchini, halved and sliced
• 10 0z. bag baby spinach
• grated Parmigiano or Romano cheese
• optional: fresh basil or parsley
• optional: whole grain pasta, like Barilla Multi Grain

Heat a soup pot over med-high heat. Add EVOO, onion, celery and garlic. Cook for 1 min, then add ground turkey. Cook until turkey is done (no longer pink). Season with fresh ground pepper, if desired.

Add beans, stock, bay leaf and Italian seasoning to the pot. Bring to a simmer. Add the green beans and the zucchini and cook for about 8 minutes. Stir in the spinach; cook just until wilted, about 1 minute.

Ladle soup into bowls and top with grated Parmigiano or Romano cheese. Top soup with shredded basil or chopped parsley if desired.

NOTE: You can add cooked pasta to this soup. I like serving the pasta on the side, so folks can add their own.
