Last month, I was privileged to take a trek with 3 gal-pals in the Grand Canyon. It just so happened that when we went, 14 inches of snow fell at the top, and the government was threatening to shut down, which would include national parks! Armed with resolve and crampons to attach to our boots in case of ice, we began our 5 hour descent. It was completely exhillerating to be ensconced in God's magnificent creation with my sis, my BFF from college and my cousin. Our motto for the trek was "I welcome this challenge!" This motto came in handy through the snow, rain, blisters, fatigue, and subsequent 8 hour hike back out of the canyon the next day.

I envisioned this hike 3 years ago when I put it on my vision board. It was an amazing accomplishment on so many fronts. All of us had our share of adversities we had dealt with in the past year, so we had a sense of deep gratitude for the trials we faced that actually made us stronger.

I've seen so many of my clients face colossal challenges this past month. Through injuries, job changes, sickness, deaths, and family issues, they have trudged on, with their eye on the prize. Their commitment to their health goals, no matter what, inspires me deeply.

You can accomplish ANYTHING if you just keep putting one foot in front of the other in the direction of your dreams. When challenges come, and they will, instead of fighting them, WELCOME them. They are perfectly ordained for your ultimate growth.

Anything that doesn't kill you, will only make you stronger.

Here's to plodding steadfastly, rain or shine, towards a happier, healthier future.

My favorite thing to do on Mother's Day is to take a LONG bike ride with my family up the River Road toward Elsah. And THEN we enjoy lunch together.

I want my family to remember me as the mom who MOVED. I figure I can ride a bike well into my eighties :)

Real Food, Real Fast!

Spinach Salad with Steak and Blueberries

This is a great COOK ONCE, EAT TWICE recipe. When you are grilling out, cook up an extra steak and have this the next day for lunch or dinner. YUM!

1 cup fresh blueberries, divided
1/2 cup chopped walnuts, toasted (see Tip)
3 tablespoons fruity vinegar, such as raspberry vinegar
1 tablespoon minced shallot
1 teaspoon sugar OR agave nectar
1/2 teaspoon salt, divided
3 tablespoons walnut oil or olive oil
1 pound (1-1 1/4 inches thick) sirloin steak or strip steak
1/2 teaspoon freshly ground pepper
8 cups baby spinach
1/4 cup crumbled feta cheese
Preheat grill to medium.
Pulse 1/4 cup blueberries, 1/4 cup walnuts, vinegar, shallot, sugar, and 1/4 teaspoon salt in a food processor to form a chunky paste. With the motor running, add oil until incorporated. Transfer the dressing to a large bowl.
Sprinkle steak with pepper and the remaining 1/4 teaspoon salt. Oil the grill rack . Grill the steak about 5 minutes per side for medium-rare, 6 minutes per side for medium. Let rest on a clean cutting board for 5 minutes.
Add spinach to the bowl with the dressing; toss to coat. Divide the spinach among 4 plates. Thinly slice the steak crosswise. Top the spinach with the steak, feta, and the remaining blueberries and walnuts.

Tip: To toast chopped nuts, place in a small dry skillet and cook over medium-low heat, stirring constantly, until fragrant and lightly browned, 2 to 4 minutes.


TIP OF THE MONTH: Grow Your Own Herbs!

Clean eating relies heavily on herbs and spices instead of soup mixes, gravies, or sugary sauces. The easiest way to have herbs at your fingertips is to grow your own kitchen garden. Recycle a container, and put it in a sunny spot, as close to your kitchen as possible. I find the following herbs indispensable for quick, healthy cooking.

1. Basil. Delicious chopped up in salads, or layered w/tomatoes and vinaigrette for a Caprese salad. Great as a pesto. My absolute favorite is to use basil in place of lettuce on sandwiches or wraps. I know summer is here when I have a fresh basil, garden tomato, and white cheddar cheese sandwich.
2. Cilantro. A must have for making homemade guacamole, or tossing in a Mexican salad. Cilantro has a fairly short season, and doesn't like the super hot weather, so enjoy it now.
3. Rosemary. One of my favorite herbs, rosemary is excellent on fish, chicken or steak, and great in homemade salad dressings. Rosemary is also hearty, and will come back the next year.
4. Mint. Spearmint is my favorite, though I have grown peppermint, chocolate and pineapple mint before too. I mainly use fresh mint in my tea and summer smoothies. Mint tossed w/watermelon makes a nice refreshing salad. I like to plant mint in a container because it has a tendency to take over a bed.

Other nice herbs to grow include Italian flat leaf parsley, thyme and chives.
