Meet our featured expert!

Jude Capper is an assistant professor in Animal Sciences at Washington State University. Her primary research interest is in developing deterministic models to evaluate the environmental impact of dairy and beef production systems. The global population and demand for milk and meat products is continually increasing, but agricultural production is limited by finite land, water and fuel resources. To supply sufficient high-quality, affordable animal products, it is therefore essential to adopt management practices and technologies that improve production efficiency, i.e. food output per unit of resource input, thus reducing environmental impact. She has helped Best Food Facts answer questions about the following topics:

Are small farms and increased consumer purchases of locally-produced food products better for the future of American agriculture and the environment?
Is meat from grass-fed cattle safer than meat from cattle that are fed corn?
Does contract production put farmers at an economic disadvantage and harm farming communities?
