There is so much going on this month so get outside and enjoy! The local Farmers Markets are opening, various arts and craft shows around York Region, Mothers Day on May 9th (don't forget!) as well as the infamous May 24th weekend. Let's hope that the weather cooperates so we can celebrate bbq style. Check out the Black Bean Salsa recipe below, totally worth the chopping!

Recipe of the Month - Black Bean Salsa

Just in time for outdoor parties and bbq's! This salsa is one of the best I have ever had. Mind you, I am a cilantro freak. Omit if you do not share my enthusiam for this great green plant...

Black Bean Salsa
1 avocado
1 cup rinsed black beans (I add a whole can)
1 cup salsa (I also add more to get the right consistency)
1/4 cup green onions
1/4 cup red peppers (I add more)
2 tbsp. chopped cilantro
1 1/2 tsp. lime juice
1/4 tsp. minced garlic
1/4 tsp. ground cumin

Feature Event - Pedal 4 Preemies

On May 29th my family and some of our closest friends are going to be taking part in a very special event., Pedal 4 Preemie. The event is hosted by The Linden Fund, a group of people who have been touched by premature birth.

They offer hope, encouragement and support to newborns, families and neonatal intensive care units in Canada.

Their purpose is to provide specialized medical equipment as well as items of comfort and convenience to assist in the mental, physical and emotional development of infants and their families.

Our family was touched profoundly by the premature birth of our first daughter in 2008. Born with a full head of red hair she was a fighter from the beginning and is a testament to the strength and determination these little babies have.

We are looking forward to walking along side our now 5 year old and her little sister,2, and help raise money for other families that have been touched by premature birth.
